FARMHOUSE RESTAURANT TO DEBUT ON MARCH 17, 2018
The upcoming dining destination redefines the restaurant model with an “Executive Farmer” leading the culinary philosophy and offerings
(Los Angeles; February 6, 2018)—Nathan Peitso, second-generation farmer of Kenter Canyon Farms, announces the opening of FARMHOUSE. Set to open on March 17, 2018 on the ground floor of the reimagined Beverly Center, FARMHOUSE redefines the traditional restaurant model by placing a farmer at the forefront of the business and thus creating a new culinary movement focused on collaboration with the region’s top farmers to grow and harvest ingredients dictating the dining destination’s dishes. Led by Peitso, in the unique role of Executive Farmer, FARMHOUSE provides seasonal farm-traceable “seed-to-plate” cuisine, presented in an atmosphere that evokes the restaurant’s name.
Executive Farmer and Menu Philosophy
The FARMHOUSE experience is deep-rooted in Southern California’s agriculture community and Nathan Peitso’s family farming legacy. As Executive Farmer, Peitso harnesses his heritage, along with teachings garnered from his mother, Andrea Crawford, long-revered by chefs for her expertise in farming through Kenter Canyon Farms, which will be reflective in a carefully crafted menu that is indicative of the region’s seasonality. Peitso plans each season’s rotating menu months in advance through the selection of seeds and varieties of produce utilizing his relationships with an assortment of local farms and network of purveyors beyond Kenter Canyon Farms—including the planting and harvesting of exclusive ingredients for FARMHOUSE.
“We operate in such an exciting time here in Southern California. Looking back to the 70s and 80s, whether here or in France, the culinary world experienced a significant turning point with a larger focus on utilizing fresh ingredients. Now, the revolution is evolving once again, as seen in the demand for quality over volume and low pricing, opening opportunities for small farms to impact how we eat today,” Peitso comments. “I am thrilled to showcase many of my friend farmers through the restaurant and introduce a variety of products that are oftentimes unavailable with larger production farms.”
Growing up amongst his mother’s lettuce fields, later morphing into today’s popular Kenter Canyon Farms, Peitso has an innate understanding of a wide range of produce including the best times and places to plant and harvest. During Peitso’s childhood, his mother befriended and grew specific varieties of greens for culinary legends Alice Waters and Wolfgang Puck. Through those relationships, Peitso witnessed at a young age the birth of the “farm-to-table” movement and has since dedicated his life to supporting farm-traceable food. Much like how his mother provided greens to restaurants, Peitso acts as a conduit, offering dishes made with only top-quality ingredients from hand-picked farms and artisans.
“Throughout Nathan’s childhood, cooking was a form of entertainment for our family. Tightly squeezed into our kitchen, I would put him to work chopping parsley and instilling in him the importance of forgoing fad microwave meals of the 80s and instead developing an appreciation of real, from-the-earth food,” says Crawford. “With the opening of FARMHOUSE, I see the passing of the baton as the teachings of his youth have come full circle, captured by his vision for a farm-forward restaurant.”
FARMHOUSE dishes showcase ingredients at their peak each month—all grown and harvested through ethical farming standards—such as nutty squash; dense baby romaine lettuce simply grilled; ripe heirloom tomatoes; sweet melons; aromatic fresh basil and mint. Looking forward to the Spring 2018 opening, the menu will debut with a focus on peas from Kong Farm, cauliflower from both Weiser Farm and Kong Farms, and carrots from Weiser Farms. As a nod to his personal dedication to the “never ever” farming methodology, responsibly farmed meat, poultry, and sustainable seafood will also be hand selected by Peitso.
“When approaching each season’s offerings, an in-depth understanding of our region’s bountiful agriculture is of the utmost importance,” Peitso says. “At FARMHOUSE, we only work within the specific windows of peakness in Southern California. Through that mindset, FARMHOUSE’s dishes highlight an uncomplicated presentation of each flavor profile, simply cooked on a wood-fired grill or oven. The less manipulation, the better—straight from the soil is always the best.”
The restaurant’s commitment to locally-sourced ingredients extends into the bakery. Drawing once again from his mother’s pedigree, and expertise in sourdough-based bread making, Pietso will rely on his family’s newly opened Roan Mills Bakery for all aspects of the wheat program—including the planting and perfecting of the harvested heirloom wheat through grain-specific milling techniques. Variations of wheat, grown by Peitso and Crawford for flavor and not high yield, will be used –such as the restaurant’s pasta flour which utilizes the ancient grain Durum separated from its natural semolina through a specialty sifting process personally perfected over many months by the mother/son duo. For the daily-produced brioche, FARMHOUSE will use California’s historically most popular wheat, Sonora Gold, known for its deep, nutty flavor. The process of customizing the grain is shown through the removal of 90% of the natural bran and milling slowly ensuring a low temperature to achieve a delicate, light flour for FARMHOUSE’s burger buns and other items.
“For me, FARMHOUSE represents and is inspired by the farming, milling, and baking of my mother,” Peitso states. “From allowing me to play beside her in the lettuce fields as a youngster, to our collaboration on growing and milling of wheat, she provided me with the instrumental tools that would shape how I view food. In my eyes, FARMHOUSE firmly captures the lessons passed down from mother to son; generation to generation.”
Adding to the farm-based menu, the restaurant presents a full bar and craft cocktail program. Offerings include regionally sourced craft beers in addition to a rotating seasonal brew, an approachable California wine list displayed on tap or in traditional bottles, and specialty cocktails with farm-traceable cold-pressed juices.
Space and Design
FARMHOUSE’s design integrates elements and materials of a traditional American farm elevated by contemporary finishes and treatments in a well-balanced aesthetic. Welcoming guests includes a large open kitchen, lined with shelves of canned and preserved items evoking a farmer’s pantry, along with a wood-fired oven and expansive grill. The 7,000 square feet space is seamlessly divided into intimate areas including a “living room” with a marquee fireplace, a “greenhouse” atrium with floor-to-ceiling windows, and a “farmer’s table” enclave. Materials and design elements found throughout the restaurant include craftsman-style moldings, wooden ceilings, slate and oak floors, exposed brick, and vintage wallpaper.
FARMHOUSE is located at 8500 Beverly Blvd. on the street level of Beverly Center in Los Angeles. Convenient valet parking is available by entering the building on Third Street. FARMHOUSE will debut with dinner service on March 17, 2018, followed by lunch and weekend brunch to commence in Spring/Summer 2018. BEVERLY CENTER ART PROGRAM SHOWCASES NEW INSTALLATIONS BY ARTISTS LIZ LARNER, HARSH PATEL, AND GARY SIMMONS
Posted Dec 12th, 2017
BEVERLY CENTER ART PROGRAM SHOWCASES NEW INSTALLATIONS BY ARTISTS LIZ LARNER, HARSH PATEL, AND GARY SIMMONS
LOS ANGELES, December 12, 2017 – Today, Beverly Center reveals the third phase of its ongoing art program with three new interior art installations created by contemporary Los Angeles artists, with a fourth to be unveiled in January 2018.
Curated by Jenelle Porter in association with the Hammer Museum, the following works are now on display:
- Liz Larner: on, beneath, above, inside and beside us, 2017
Liz Larner makes sculpture and installations that expand the possibilities of space, color, materials, volume and perception with a range of material including textiles, papier-mâché, stainless steel and mineral rocks. For this project, the material and symbolic qualities of California minerals inspired Larner to transform Level 8 of Beverly Center into a mineral cave. Her installation encompasses images of minerals to signify that minerals are everywhere, including in clothes, scaffolding, floors, sunglasses, makeup, paint, food, and even computers.
- Harsh Patel: 2D, 2017
Harsh Patel is a graphic designer whose work seeks to explore and expand the graphic design canon from one historically biased toward European designers to one that includes Eastern and Asian visual traditions. For Beverly Center’s Level 7, Patel’s project points to the ways both graphic design, in its diversity, and shopping centers can draw together people from varied cultures and classes. The “letters” Patel has constructed are a mix of elements such as graffiti, comics, letter fragments and obscure typefaces. Some of the forms are instantly recognizable, such as a scissor blade and handle; others are abstractions. Patel’s letterforms demonstrate that what constitutes letters and reading is being rapidly transformed by technology and globalization.
- Gary Simmons: Posted Bills, 2017
Gary Simmons is a visual artist whose work explores the icons and stereotypes of American popular culture and history. At Beverly Center Simmons adopts the look of flypasted barricades by “papering” on the temporary construction walls on Level 6. Simmons mixes a range of found imagery from concerts to hot rod shows, which he sources on the Internet and then manipulates them to construct new, vibrant images. “It’s visual sampling, in the way that music has long sampled from what came before it,” Simmons says of this artwork. “They all kind of feed off of each other.”
Arriving in January 2018, Beverly Center will premiere a final temporary art installation:
- Tanya Aguiñiga: Feminine Occult, 2018
Tanya Aguiñiga uses craft as a performative medium to generate dialogues about identity, culture and gender while creating community. Her work, installed on Level 8 of Beverly Center, will be a sculptural seating installation combining luxury materials with simple shapes including massive, oversized rope knots that are like drawings in space, frozen in an unfamiliar and seductive alchemy. Visitors will be able to sit, relax, and experience first-hand the artist’s delightful play of materials.
Beverly Center first debuted the art program in July 2016 as a way to activate construction areas during the ongoing renovation. Since the introduction of the program thirteen local artists and their works have been featured throughout the interior and exterior of the center.
Beverly Center is currently undergoing a $500 million reimagination that is transforming every aspect of the iconic fashion destination. The project is creating a bright, contemporary and highly accessible exterior and interior that engages the center with the surrounding neighborhood, produces an effortless arrival, parking and departure experience, and offers a perfectly curated retail lineup and superior destination dining. The center will be open throughout the renovation that is scheduled to be completed by holiday 2018.

Four New Restaurants to Join Beverly Center’s
Culinary Lineup as Part of its Complete Reimagination
More award-winning, exciting concepts will be announced this year
LOS ANGELES, May 22, 2017 – Taubman Centers, Inc. (NYSE: TCO) today announced four new restaurants will join Beverly Center’s culinary lineup as part of the shopping and dining destination’s $500 million reimagination. The restaurants -- Cal Mare, Eggslut, FARMHOUSE and Yardbird -- will be located on Level 1 and all are anticipated to open by the end of 2018. More award-winning, exciting concepts will be announced this year.
“We have always focused on food as a key component of Beverly Center’s renovation,” said Taubman’s Chief Operating Officer William Taubman. “In doing so, we have curated a collection of point-of-difference restaurants offering a variety of different cuisine and price points from which to choose. The experience will be unlike anything offered in the market today.”
Cal Mare by Chef Michael Mina
A brand new 8,200 square foot concept from James Beard Award-winning, Michelin-starred Chef Michael Mina, Cal Mare is a celebration of coastal Italian cuisine with Mediterranean and Californian influences. Conceived along with chef partner Adam Sobel, the menu will focus on seafood for satiating but light and healthy Italian meals. The restaurant’s design will evoke the vibrant seaside elegance of Italy’s Amalfi Coast with a nod to its contemporary southern California setting.
“It’s an honor to partner with Adam Sobel for Cal Mare at Beverly Center, as well as so many other chefs that will be lending their talents to The Street, A Michael Mina Social House, that we announced last year,” said Chef Mina. “I am incredibly excited to share our celebration of global cuisines and our truly dynamic spaces with the Los Angeles community.”
Located on Level 8, The Street will offer a variety of cuisine from Chef Mina and approximately 15 to 18 other chefs. The food will be served from hawker stations reminiscent of the great bazaars of the world. The venue’s indoor seating and outdoor dining terrace offer incredible views of the Hollywood Hills and downtown Los Angeles.
FARMHOUSE by Chef Laurent Halasz
FARMHOUSE celebrates California’s abundance of bounty from local farms, markets, dairies and purveyors, situated within a new informal dining experience at the revitalized Beverly Center. The menu will focus on a curation of four to six key ingredients per season that are at their peak freshness with rotating sharable dishes including vegetables, salads, meats, fishes, pizza and pastas, simply cooked in a wood-fired oven and wood grill. The 7,000 square foot space will be reminiscent of a modern California farmhouse with a relaxed feel, fire place, open kitchen and large bar.
FARMHOUSE is the brainchild of Laurent Halasz, who moved to Southern California from the South of France close to a decade ago, bringing with him a lifelong respect for quality ingredients and simple flavors.
Yardbird will be a 6,000 square foot house of worship to farm-fresh ingredients, classic Southern cooking, culture and hospitality. Helmed by award-winning restaurateur John Kunkel, the original location was recognized by the James Beard Foundation as “Best New Restaurant” and was named among “America’s Best New Restaurants” by Bon Appétit. A modern take on Southern comfort means shared plates and critically acclaimed fried chicken, to name a few of the restaurants specialties. A crafted cocktail program and extensive bourbon menu round out Yardbird’s hospitable atmosphere that includes an outdoor patio. Los Angeles will be the third city for this concept that also has locations in Miami Beach and Las Vegas.
“We are very excited to be expanding into a major influencer city such as Los Angeles and to be able to call the Beverly Center our new home,” said Kunkel. “We have found a pretty unique niche with the Yardbird brand and think we will be a perfect fit among the other amazing restaurants in the space.”
Eggslut is a chef driven, gourmet food concept founded in 2011. It’s inspired by a true love for eggs. The menu is a balance of comfort and innovation, celebrating food that appeals to both a novice and extreme foodie through classic comfort fare, all- encompassing its key ingredient -- eggs. No longer just a breakfast staple, Eggslut makes eggs appetizing all day, every day. The restaurant’s focus is on the quality and taste of its food, consistent presentation and great customer service.
Eggslut began as a food truck that roamed the streets of Los Angeles, eventually turning into a food stall in downtown L.A. Although the food truck has since retired, Eggslut has grown to multiple stores across Los Angeles and even in Las Vegas.
Said Eggslut’s founders: “We love food. We care about the way it looks and how it tastes and we strive to give one of the best breakfast experiences. We’re excited about our new location in the Beverly Center and know it will be a great place for us to reach more egg lovers.”
Importantly, each new restaurant at Beverly Center will be easily accessible by pedestrians at the street level, while a new, additional valet entrance and new parking technology will make for easy access for those traveling by car.
Beverly Center’s renovation is not only transforming the dining experience, the project will also create a bright, contemporary and highly accessible exterior and interior that engages the center with the surrounding neighborhood and will expand the center’s perfectly curated retail lineup that covers everything from fast-fashion to luxury. Every store is open throughout the renovation that is scheduled to be completed by holiday 2018.
